Butternut squash & feta salad

I definitely believe roasting brings out the best in the majority of ingredients. The crispy prosciutto, soft & sweet butternut squash, roasted cauliflower and warm feta cheese is a delicious warm salad. I love the salty, crispy goodness that prosciutto becomes when roasted, along with sweet butternut squash that has been caramelised, delicious cauliflower and a slightly charred feta cheese that is soft on the inside. Amazing! I am a huge fan of adding feta to any vegetables when roasting. It really complements a dish. The recipe is so simple, and super fast with a delicious outcome. I think it works as a perfect midweek side or even a whole meal, and of course it would be perfect for a Sunday roast along with some roast pork or chicken.

Ingredients 

Serving: Side for 4 people

1 Cauliflower (Cut into florets)

1/2 Butternut squash (Diced)

6 slices of Prosciutto

1 tbsp Honey

1/2 cup Feta (Crumbled)

Olive oil or Ghee 2 tbsp

1 bunch of Sage

Method

  1. Preheat oven to 180 degrees.
  2. In a bowl marinate the butternut squash & cauliflower in honey and olive oil then place into the oven to roast for 20 minutes.
  3. Add the prosciutto, feta and sage and roast for another 10-15 minutes depending how you like the vegetables.
  4. Take out of the oven and add any additional seasoning that you like and then it’s ready to eat!
