Halloumi Salad

Oh summer and it’s incredible abundance and variety of fruit. When shopping for this recipe, I couldn’t choose just one stonefruit. Walking through an entire aisle of apricots, different plums, nectarines, peaches and so many varieties of each I just kept grabbing each and every type! The halloumi that I served all the fruit with was just so so good too. Honestly, add halloumi to anything and it’s the best dish ever. So here is a very quick and simple recipe for all halloumi lovers that I think you will really enjoy. We certainly did, and I’ll be adding this to my signature dish collection without a doubt! Serve this salad on the weekend at your bbq along with grilled vegetables and lamb koftas or stuffed vegetables. The colours and vibrancy of this salad also just makes me super happy!

Recipe for Halloumi with mixed plums, apricots, peaches, nectarines and zesty lime dressing

Prep time: 15 minutes

Cook time: 5 minutes

Serves: 6 (as a side salad)

Ingredients:

2 x halloumi packets (Christis brand)

6-8 mixed stonefruit (variety of different blood plums, apricots, peaches, nectarines)

2 x limes (juice and zest)

4 sprigs of fresh mint

4 sprigs of fresh oregano

2 tbsp x olive oil (plus extra for cooking)

Method:

  1. Slice the stonefruit into wedges and remove any seeds from the centre. Place the wedges onto a large flat plate or serving platter.
  2. Mix the lime zest, the lime juice and olive oil together. Set aside.
  3. Heat a fry pan and add a drizzle of olive oil. Slice the halloumi into thick slices and fry on each side until golden brown (approximately 1-2 minutes each side). Spread the pan fried halloumi over the top and around the stonefruit. Drizzle with the zesty lime oil and scatter the fresh mint and oregano around. Season with salt if you would like to.
