Poached Peaches

Simple poached peaches. Beautiful served with vanilla ice cream, custard or anything else soft and creamy!

 

Poached Peaches

Ingredients:

8 peaches

1 cup white sugar

1.5L water or just enough to cover the peaches

3 tbsp rose water

Method:

1.Wash and rinse the peaches. Cut a cross on the skin on the base of each peach.

2. To make the poaching liquid, add the sugar and the water into a large pot. Bring to a simmer and stir the sugar through the water to dissolve it.

3. Add in the peaches and cover with some baking paper that’s been cut into a round circle roughly the diameter size of the pot. Bring to a simmer for approximately 10 minutes. Remove the peaches with a slotted spoon and place into a separate bowl. Cool slightly then peel the skin off the peaches and discard the skin then transfer the peaches into a couple of large jars.

4. Add the rosewater into the poaching liquid, mix and allow to cool. Pour the cooled poaching liquid over the peaches. Close the jars and store in the fridge until serving.
