Continuing on with my current obsession for radicchio I thought I would experiment with a few leftover ingredients. These are lovely and refreshing, great for a snack or they would be nice on a large wooden board at a lunch or dinner. Super simple and quick with minimal fuss the recipe for these radicchio wraps is below 🙂
8 Radicchio leaves
2 bunches of Broccolini
1 cup Goats Cheese
1 Lemon (juice and zest)
Salt and Pepper
2 tbsp Olive Oil
- First prepare the goats cheese mixture by mixing the cheese along with 1 tbsp of the olive oil, the juice from the lemon and finely grated zest (I use a microplane to zest the lemon finely).
- Rinse the broccolini and chop it roughly, mixing through some olive oil and salt + pepper.
- Fill the radicchio shells by placing a tablespoon of the citrus goats cheese mixture, and top with the broccolini.
