Summer salads like this are what we eat all summer long. Basically some raw vegetables, some fresh herbs, a bit of feta or other white cheese, plenty of olive oil and salt. Ready in 10 minutes and just such a good side dish to anything else that you’re having. We had this last night with some tuna cooked in passata and kale (which also took 10 minutes and can be found here). Lazy cooking at it’s best! I’ll be making this again tonight as a side to some poached chicken that i’ll mix through avocado and place into a nice cup of crunchy cos lettuce. The salt brings out all of the tomato juice and mixes really nicely with the olive oil…use some fresh bread to soak in that delicious goodness!
Recipe for Summer Salad
Prep time: 10 minutes
Serves: 2
Ingredients
4-6 x small or medium tomatoes (less or more, just use as much or little as you like)
1 x cucumber
1/2 x red onion
1 x green capsicum
1 x bunch of fresh basil
2 x sprigs of fresh oregano (or dry oregano if you don’t have fresh)
100 g feta (more or less depending on your preference)
Drizzle of olive oil
salt and pepper
Method
- Slice and dice the tomatoes, the red onion and the capsicum. Slice up the cucumber into half moons. Place all of the the vegetables into a large bowl, add the fresh basil (whole or torn/finely sliced0, the oregano, the olive oil and salt. Sprinkle over the feta finely. Toss everything through and serve!
