This is a quick recipe for a tomatillo salsa that I made over the weekend after finding fresh tomatillos at the organic markets!! I was super excited to see them at one of the fresh produce stalls…I haven’t seen these before so I had to take them home. I made this delicious salsa that Im just using throughout the week. You can play around with adding different ingredients – like green capsicums, limes, mixed chillies etc! Serve it along with any Mexican style dish, in burritos, with guacamole, in cheese and tomatillo toasts and so many more ways. So if you can find these around then make a salsa out of them! Recipe is below.
Recipe for Tomatillo Salsa
Prep time: 5 minutes
Cook time: 30 minutes
Makes 1 large jar
approximately 25 tomatillos
1 x large onion (skin removed and sliced into quarters)
2 x garlic cloves (skin removed)
2 x jalapeños
1/2 bunch of fresh coriander
1/2 lemon (juice only)
- Preheat the oven to 180 degrees. Remove the green husks from the tomatillos and rinse them well. Slice the tomatillos in half and put on a baking tray lined with paper along with the onion and carrot. Sprinkle with salt. Place in the oven and bake for 30 minutes or until the tomatillos have softened and you can see some of their juices on the tray.
- Remove from the oven and transfer the roasted tomatillos, the onion and garlic into a processor or blender. Add the lemon juice and the fresh coriander and proces until a rough textured mixture has formed.
- Transfer into a jar or onto a plate and serve along with guacamole, chips or any Mexican dish.
